Summer Barbecues in the Highlands
What a summer it’s been for barbecues here up North in Strathspey. Our oil drums brilliantly modified into barbecues by the local blacksmith have become well seasoned by our favourite hard woods for grilling, ash and willow. We are using two drums, one for making the coals and the other for grilling in tandem, which has happily helped reduce the incidents of burnt offerings. The Man Fire Food travelogue across the USA by the American chef Roger Mooking has become addicitive on an evening when we’re inside.
